They appear in the cooler months and are a deep dark red. When wild harvesting elderberries, please be mindful not to overharvest (as with elderflowers) and keep in mind that the berries are slightly toxic when green or raw (this changes when the berry is heated).
INGREDIENTS
45 ml gin
2 teaspoons elderflower liqueur
1 teaspoon lemon juice
Champagne or Prosecco for topping
Rosemary sprig, lemon slice for garnish
METHOD
Shake together the gin, lemon juice, and elderflower liqueur in a cocktailshaker with ice. Pour into desired glass. Add a splash of champagne to the top. Garnish with a sprig of rosemary and a slice of lemon. Serve right away.
